綺麗な酸味を得るため、収穫時期は早めに、いつもこの畑から始める。
プレスは優しく行い、タンニンや果皮の色が抽出されないようにする。
アルコール10%前後。残糖はほとんどない。フレッシュで明るいスパークリングです！

シャルドネ90%、シュナン・ブラン、モーザックをブレンド。標高400m超の高地で、樹齢23〜53年のブドウを天然酵母で発酵、600Lの樽で12ヶ月熟成。南北両向きの畑から、ロケタイヤードの多様なテロワールを凝縮した1本です。
