オート・コート・ド・ボーヌ フュ・ド・シェーヌ 2023。

シャルドネ100％。

樹齢約30年のブドウを使い、オーク樽で10〜12ヶ月じっくりと熟成しています。

グラスに注ぐと、ほのかな麦わら色に淡い金色の輝き。

白い花の香りに、リンゴ、洋ナシ、モモを思わせる果実の香りが重なり、樽熟成から生まれるトーストやバニラのニュアンスがふわりと広がります。

口当たりはやわらかく、ほどよいボリューム感。

ふくよかな果実味と樽のニュアンスを、柑橘を思わせる爽やかさがきれいにまとめ、心地よい余韻へと続きます。

ふくよかだけれど、重たすぎない。
樽の香りは感じるけれど、上品。

そんなバランスの良さを楽しんでいただきたいブルゴーニュ・シャルドネです。

甲殻類や川魚、野菜を使ったお料理と。山羊のチーズや、コクのあるハードチーズとゆっくり楽しむのもおすすめです。

今回はラベルに傷や汚れがあるため、秋の蔵開きへ。

見た目はちょっと訳あり。
でも、中身はいつものドメーヌ・ニコラ。

100% Muscadet (Moulon de Bourgogne). Anima Mère means "my soul." There are three types of labels, each representing the three elements of "terroir, grapes, and people." It's a surprise which label you'll receive!

This exceptional Muscadet features a distinctive, fresh lemon-like citrus aroma. It expresses delicacy and elegance, as well as bold minerality. It pairs perfectly with fresh seafood such as oysters, shrimp, octopus, and white fish. It's a mature, stable Muscadet for adults!

Chardonnay is only permitted in Alsace for sparkling wine, hence the label "Vin de France." Producing Chardonnay in Alsace is quite rare. With one sip, butter and rich vanilla dance, enticing the senses. The aroma is sensual, seductive with notes of butter, toast, peach, and acacia. This wine is perfect for luxurious relaxation, satisfying the soul and ensuring a moment of enjoyment.

This wine is bottled unfiltered after being treated on the lees, following the Neuchâtel tradition. The label is attached upside down to ensure the sediment is evenly dispersed. When the sediment dissolves, the wine becomes cloudy, but still has a full body. It pairs perfectly with shrimp, crab, sea bass, matsutake mushrooms, mushrooms, and truffles.

標高400mを超える高地に畑を持つ「ドメーヌ・ド・ムスカイヨ」。

南仏らしい豊かな果実味を持ちながら、高地ならではの美しい酸とミネラルが感じられる、白と赤をセットにしました。

白の「リムー」は、シャルドネを主体にシュナン・ブランとモーザックをブレンド。
洋梨や柑橘、白い花の香りに、豊かなミネラルとほのかなバターのニュアンス。しっかりとした厚みがあり、パワフルでありながら、どこか気品をまとった味わいです。

【ドメーヌ・ドゥ・ムスカイヨ】IGPオート・ヴァレー・ド・ロード ピノ・ノワール 2022 赤

赤は、ピノ・ノワール100％。
チェリーや熟した黒い果実の味わいに、ほのかなココアやバニラのニュアンス。力強い果実味を石灰質土壌からくるミネラルが引き締め、上品で洗練された印象に仕上がっています。

白は鶏肉などの白身肉に。
赤はローストミートやグリル料理と一緒に。

力強いのに、重たすぎない。
豊かなのに、どこか凛としている。

南フランスの高地が生み出す、ムスカイヨならではのエレガンスを赤と白でお楽しみください！

Made with 100% Chardonnay, this wine uses late-harvested, fully ripe grapes, some of which are infected with noble rot. The harvest was not completed in time for the application for a sweet wine, so it cannot bear the name Beerenauslese, but the quality is comparable. The wine has a fine, creamy texture and a floral, noble roasted green tea aroma. The wonderful sweetness and subtle tannins create a well-balanced sweet wine with a powerful structure.

シャルドネ100%。粘土石灰質土壌。樹齢30年。栽培面積0.90ヘクタール。収量は55ヘクトリットル/ヘクタール。オーク樽で10〜12ヶ月熟成。ほのかな麦わら色で、淡い金色の輝きを帯びている。白い花の香りが、リンゴ、洋ナシ、モモの果実の香りと調和。樽熟成による、エレガントな樽香。トースト、バニラの香りが感じられる。口当たりは柔らかく、程よいボリューム。柑橘系の香りとのバランスが良く、爽やかな後味に繋がる。サラダ、甲殻類、川魚、野菜。マイルドな青かびチーズ、山羊、コクのあるハード系のチーズ。

シャルドネ100%。大変珍しいマランジュの白。
傾斜が急なスロープの畑は日当たりと、水はけが良く、ワインに適度な骨格を与える。
アプリコットや生のアーモンドのアロマ。シャサーニュを思わせる気品、ムルソーを思わせるまろやかさを併せ持ち気品にあふれている。
🍷鮨、子持ち鮎、ワカサギ、シシャモ・・・なぜか和の雰囲気をイメージ。

100% Chardonnay. Hand-harvested from a 0.9ha southeast-facing plot. Made with grapes planted in 1992 and 2003 on deep, stony soils. Named in honour of founder Amélie.

Fermentation and aging are carried out in barrels, with sur-lie aging for 10 months (30% new barrels). It has a scent of white fruit and oranges preserved in syrup, and a slightly creamy texture. Its mellow, rich flavor complements perfectly with main dishes. A bottle that will add elegance to your dinner table.
