ホイリゲの解禁日は、毎年11月11日(聖マルティン祭)ですが、そもそもヴィムマー・チェルニーでは、9月初旬に収穫し、12月中旬に瓶詰めをします。
「解禁日に合わせて急いで仕込むより、やっぱり美味しいワインで今年を祝いたい！」
そんな造り手の想いを最大限に尊重する意味で、わざわざ急いで解禁日に間に合わせる事はさせず、かつ、高い飛行機代が値段に反映されてしまうような無駄な事はせず！
