ホイリゲの解禁日は、毎年11月11日(聖マルティン祭)ですが、そもそもヴィムマー・チェルニーでは、9月初旬に収穫し、12月中旬に瓶詰めをします。
「解禁日に合わせて急いで仕込むより、やっぱり美味しいワインで今年を祝いたい！」
そんな造り手の想いを最大限に尊重する意味で、わざわざ急いで解禁日に間に合わせる事はさせず、かつ、高い飛行機代が値段に反映されてしまうような無駄な事はせず！

シラー100%。収量40hl/ha、手摘み収穫。樽熟成8〜12か月、バトナージュは月の運行に従って行います。殺虫剤不使用。丘の中腹に広がる複数区画から、花崗岩や黄土、石英、粘土、粗い砂の多様な土壌で育まれます。紫がかった色調に、カシスやラズベリー、スパイスの香りが広がり、しなやかで柔らかく、調和のとれたフィネスが魅力のワインです。

ピノ・ノワール100%。ウイユ・ド・ペルドリの姉妹ワインで、最初の圧搾で得た淡い黄色の果汁だけを使用。洋梨や野イチゴのような新鮮な香りに、はじける柑橘の爽やかさ。生き生きとした辛口で、ダイナミックな仕上がりです。川魚や魚介と相性抜群！

シャルドネ100％、0.6ヘクタールの区画から生まれる特別な1本。樹齢45年のブドウを使用し、20％新樽で12か月熟成。集中力があり、パワフルで活気に満ちた味わいが特徴です。香りと味わいが多層的で、繊細さと優雅さが絶妙に調和。ムルソーの多面的なテロワールが感じられる、洗練された仕上がりです。

3つの区画から選ばれた特別なブドウを使用！粘土石灰岩や粘土質土壌で育ち、樹齢15～40年の実力派。20～30％新樽を使い、シュール・リーで16～18か月じっくり熟成。ノン・フィルター仕上げで、自然な味わいが楽しめます。この丁寧な造りを、ぜひご堪能ください！

平均樹齢48年のブドウを使用。粘土と砂の混じった川の堆積土壌で育ち、手摘みで丁寧に収穫。自然酵母で20日間発酵し、フルーティーで純粋な味わいを追求しています。古樽で17か月間シュール・リー（発酵後に澱と一緒に寝かせる方法）熟成し、ノン・フィルターで瓶詰めされた自然派ワインです。

ピノ・ノワール 85%、シャルドネ15%。セラーで静かに寝かせた逸品。
