This wine is bottled unfiltered after being treated on the lees, following the Neuchâtel tradition. The label is attached upside down to ensure the sediment is evenly dispersed. When the sediment dissolves, the wine becomes cloudy, but still has a full body. It pairs perfectly with shrimp, crab, sea bass, matsutake mushrooms, mushrooms, and truffles.
