40 % Pinot Noir , 40 % Chardonnay, 20 % Pinot Meunier .
Dosage 9g/L . Aged in bottle for 2.5 years + disgorgement (removal of lees) followed by 6 months of bottle aging.

The wine is grown in the deep loam layer and is carefully hand-picked, using only the first strain. Attractive aroma and solid structure. After malolactic fermentation, bottle aging for a minimum of 12 months. Aromas of pear, plum, and fresh butter spread, and the crisp acidity from Chardonnay and the structure from Pinot Noir harmonize with the luxurious cremant.

100% Mourvedre.
"Zezette" is the name of the vineyard and a nickname for Mourvedre.
To achieve a beautiful acidity, we always start harvesting early from this field.
The pressing should be gentle to avoid extracting tannins and skin color.
Alcohol content is around 10%. There is almost no residual sugar. A fresh and bright sparkling wine!
