ピノ・ノワール100%。粘土石灰質土壌。樹齢50年。栽培面積13ha。収量は50ヘクトリットル/ヘクタール。オーク樽で12ヶ月熟成。濃い紫色の外観と、さくらんぼやラズベリーを思わせるフルーティーでチャーミングな香りを持つ。時間の経過とともに、カシスや森の下草の香りへと変化。スパイシーさがアクセントになっている。樽熟成により、ほのかにキャラメルのような、スモーキーな香りも特徴的。しっかりとした印象で、口に含むとその複雑さと、フルーティーさ、豊かな酸味、柔らかいタンニンのバランスがたいへん魅力的。ロースト肉、子牛、塩漬け肉、マスタード風味の豚ヒレ肉。野菜、グラタン。マイルドな味わいのチーズ

シャルドネ100%。粘土石灰質土壌。樹齢30年。栽培面積0.90ヘクタール。収量は55ヘクトリットル/ヘクタール。オーク樽で10〜12ヶ月熟成。ほのかな麦わら色で、淡い金色の輝きを帯びている。白い花の香りが、リンゴ、洋ナシ、モモの果実の香りと調和。樽熟成による、エレガントな樽香。トースト、バニラの香りが感じられる。口当たりは柔らかく、程よいボリューム。柑橘系の香りとのバランスが良く、爽やかな後味に繋がる。サラダ、甲殻類、川魚、野菜。マイルドな青かびチーズ、山羊、コクのあるハード系のチーズ。

「Tour Sarrazine」はジゴンダスにある歴史的建造物。グルナッシュ75、シラー15、ムールヴェドル10。25hl/ha。30から60年樹齢。有機栽培、手摘み。このワインは、非常に強烈な力を秘めています。胡椒のような、また熟した赤いフルーツのような印象がずっと続きます。品位のあるルビー色。タンニン分は、なめらかで艶があります。肉料理全般、特に鹿やいのししなどとは、格調高いハーモニーを生み出します。お食事とともにゆっくりと、じっくりこのワインと語りかけるのがGOODでしょう。素晴らしいワインです。

カリニャン、グルナッシュ。フルーティーでフレッシュな品種を選抜。1900年代にはフィーヌ・フォジェールとしてAOC認証の資格を得ていた。コニャック蒸留器で、二重蒸留方式。最低3年樽熟成。
濃厚な香りは砂糖漬けのフルーツを思わせ、ほのかにバニラのニュアンスが感じられます。口当たりはシルキーでエレガント。ほんのりとした甘みが、コクと飲みやすさをプラス！

シャルドネ100%。大変珍しいマランジュの白。
傾斜が急なスロープの畑は日当たりと、水はけが良く、ワインに適度な骨格を与える。
アプリコットや生のアーモンドのアロマ。シャサーニュを思わせる気品、ムルソーを思わせるまろやかさを併せ持ち気品にあふれている。

Merlot IGP Cotes de Proueil 2021 Red

100% Pinot Noir. 100% destemmed grapes from 5-60 year old vines. Settled at 15°C before fermentation. The color is slowly extracted, and fermented in stainless steel tanks at temperatures below 30°C to maximize the aroma. Then, aged on the lees for 12 months in barrels (25% new).

Lieu-D's "Le Petit Pretent" is made from grapes grown in a southeast-facing vineyard at the foot of the Givry hills, right in front of the winery. This wine, named "Above the Pigeon House," is captivating with its aroma of ripe red fruit, smooth tannins, and supple, full-bodied flavor. It exudes depth and a sense of leisurely leisure. It's a rich wine reminiscent of the duck dishes at the famous Lameloise restaurant.

100% Chardonnay. Hand-harvested from a 0.9ha southeast-facing plot. Made with grapes planted in 1992 and 2003 on deep, stony soils. Named in honour of founder Amélie.

Fermentation and aging are carried out in barrels, with sur-lie aging for 10 months (30% new barrels). It has a scent of white fruit and oranges preserved in syrup, and a slightly creamy texture. Syrah 60%, Grenache 35%, Mourvedre 5%. Yield: 35hl/ha. Carefully finished with full destemming, with two pump-overs per day during fermentation. Aged for three years in concrete tanks.
