【シャトー・ヴィラン】ヴァン・キュイ　NV

甘口ワイン。
プロヴァンスの伝統では、クリスマス・イヴの夕食前に最年長者はヴァン・キュイのグラスを持ち上げ、新年の幸福を願って、神に祈りを捧げる。
ヴァン・キュイはかつてはどこの蔵元や家庭でも作られていたが、やがて廃れて一度完全に生産が途絶えた。それを1970年代にかつてのレシピが再発見され、わずかに今に伝わる。暖炉の前に鍋を置き、その中にブドウ果汁を投入。70度前後で温めながら、水分を飛ばし、濃縮した果汁を得る。その後発酵させて醸造する。オーク樽で2年間熟成。ヘーゼルナッツのような香り。キャラメルのような、上品な濃縮した甘味があるが、酸味もあるのでしつこくない。
🍷フォアグラのポワレ、ナッツ、アーモンド、栗、チョコレート、キャラメル、熟したメロン、フルーツコンポート、マカロンなど。

 

 

シャルドネ100%。大変珍しいマランジュの白。
傾斜が急なスロープの畑は日当たりと、水はけが良く、ワインに適度な骨格を与える。
アプリコットや生のアーモンドのアロマ。シャサーニュを思わせる気品、ムルソーを思わせるまろやかさを併せ持ち気品にあふれている。

🍽 It pairs well with grilled chicken, pork, and lightly spicy dishes, making it a relaxing and comforting addition to any dinner table.

100% Pinot Noir. 100% destemmed grapes from 5-60 year old vines. Settled at 15°C before fermentation. The color is slowly extracted, and fermented in stainless steel tanks at temperatures below 30°C to maximize the aroma. Then, aged on the lees for 12 months in barrels (25% new).

Lieu-D's "Le Petit Pretent" is made from grapes grown in a southeast-facing vineyard at the foot of the Givry hills, right in front of the winery. This wine, named "Above the Pigeon House," is captivating with its aroma of ripe red fruit, smooth tannins, and supple, full-bodied flavor. It exudes depth and a sense of leisurely leisure. It's a rich wine reminiscent of the duck dishes at the famous Lameloise restaurant.

100% Chardonnay. Hand-harvested from a 0.9ha southeast-facing plot. Made with grapes planted in 1992 and 2003 on deep, stony soils. Named in honour of founder Amélie.

Fermentation and aging are carried out in barrels, with sur-lie aging for 10 months (30% new barrels). It has a scent of white fruit and oranges preserved in syrup, and a slightly creamy texture.
